One tray summer chicken

One pot meals for winter – one sheet meals for summer ❤️❤️☀️☀️

I’m not about faffing in the kitchen for hours or doing loads of Washing up but I don’t want to miss out on flavour! .

.

1 sheet meals are where it is AT!! So easy and so tasty!!

.

.

For this balsamic chicken and roasted veg you need – .

.

☀️ 2 chicken breasts, halved

.

☀️1 yellow pepper (sliced and de-seeded)

.

☀️ baby tomatoes on the vine

.

☀️4 garlic cloves, peeled and halved .

☀️ fresh @staarvey_farm thyme .

☀️I red onion, quartered .

☀️ drizzle of balsamic vinegar .

☀️drizzle of olive oil .

.

☀️☀️preheat oven to 180c

.

☀️☀️line a pan with baking paper .

☀️☀️place chicken, peppers, onions, tomatoes and garlic on the tray, top with thyme and drizzle with oil and vinegar

.

☀️☀️ bake for an hour, turning the chicken half way

.

.

☀️☀️ I served with pasta in a homemade tomato sauce that was just 1 tin chopped tomatoes, 2 tbsp tomato purée, 1/2tsp garlic purée and splash of balsamic vinegar and 1 tsp sugar – whizz in @nutribulletuk and warm through 😍😍

.

Jam filled strawberry cupcakes

I was up at @robinsonsiom again yesterday and saw these beautiful edible flowers from @staarvey_farm and was inspired to make these mini Victoria sponge cakes ❤️

.

.

I got all the ingredients from Robinson’s and most of them are Manx! Robinson’s have their #summeroflove open day at their cooil road store tomorrow, 30th June from 10am where there will be showcasing the best local suppliers, tastings, samples and fun kids activities! Get yourselves up there! .

If you want to recreate these delicious cupcakes you will need –

Ingredients. .

❤️❤️For the sponge – .

❤️175g @iomcreamery butter, at room temperature .

❤️175g @laxeyflour self-raising flour

.

❤️150g caster sugar

.

❤️½ tsp baking powder

. ❤️3 large @closeleecefarm eggs

.

❤️½ tsp vanilla extract

.

❤️❤️For the icing:

.

❤️175g @iomcreamery butter, at room temp

.

❤️½ tsp vanilla extract

. ❤️2-3 tbsp @iomcreamery milk

.

❤️350g icing sugar, sifted

.

❤️❤️For the filling-

.

❤️Manx strawberry jam

.

❤️❤️For the decoration .

❤️@staarvey_farm edible flowers

.

❤️Dehydrated Manx strawberries .

.

❤️❤️directions . ❤️In a large bowl add all the ingredients for the sponge and mix well in a mixer

.

❤️preheat oven to 180c and line a muffin tin with 12 cupcake cakes

.

❤️evenly split the batter between the cases and bake for 22-25 mins

.

❤️leave to cool and then with the top of a piping attachment (or a teaspoon) scoop out a hole in the top of each cake, fill the hole with a tap of jam and replace the scooped out cake.

.

❤️mix the icing Ingredients in another mixing bowl and pipe on top of each cake

.

❤️decorate with the gorgeous flowers and the crumbled strawberry (a fresh strawberry on top works just as well!)

.

Watermelon ice pops

Watermelon pops!!

Quick quick! Go and cut up your watermelon, stick some lolly pop sticks in each piece, freeze for an hour at least, melt some dark choc and dip each bit in and sprinkle on some funfetti sprinkles and enjoy!!

.

.

You can freeze for longer if you like (or while you’re at work today!) just make sure you leave it out for a bit longer to soften up before you eat ✌🏻

.

.

*please be careful when giving to younger kids as frozen bits of food can be a chocking risk * .

.

DELISH!!

Vegan by the way if you use dark choc and vegan sprinkles! You can sprinkle with coconut, sliced almonds, rock salt, freeze dried strawberries – ANYTHING!! Let your imagination run wild!! .

Banana and blueberry waffles

It’s the summer holidays!!!! This means I have time to crack open the waffle iron on a weekday and make some blueberry and banana waffles 😍 (they’re vegan too!) .

So easy to make and a massive hit with miss 3 (miss 6 refused 🙄) I got all my ingredients from @robinsonsiom As per 😍😍

🎉150g @laxeyflour self raising flour

.

🎉2 tsp Baking Powder

.

🎉300ml Soy Milk (or other non-dairy milk)

.

🎉1 Ripe Banana

.

🎉1 Tbsp Coconut Oil

.

🎉1 tsp Vanilla Extract

.

🎉1 tsp cinnamon .

🎉1 tbsp blueberries .

🎉Sliced banana, blueberries and maple syrup to serve .

.

🎉🎉Throw all ingredients into @nutribulletuk bar the blueberries, whizz until smooth and stir in tbsp blueberries .

🎉🎉Add tbsp portions to waffle iron and cook until crispy on the outside (about 4-5 mins) .

🎉🎉Serve with sliced banana, blueberries and a drizzle of maple syrup

Miss 3 ate 4 of these but I had to make sure her waffle mixture contained no blueberries and she doesn’t like them ‘squished’ 😳🙄😂

Apple rose pastries

Apple rose pastries for breakfast today! .

It’s cold and grey and drizzling here on the Isle of Man! I HAVE THE HEATING ON! .

Needed comfort food and had left over puff pastry from tea last night and some @pinkladyappleuk and apple sauce from @robinsonsiom so decided to make these for breakfast this morning 😍🍏🍎

.

Yes I am #breakfastgoal -ing my own baking coz it was FIT AF!! 😂

.

.

Quick and easy to make with @jus_rol puff pastry and #vegan too!! So delish!

.

.

Slide for the steps – I rolled out puff pastry, cut into strips, mixed cinnamon with apple sauce, spread on the strips, sliced 2 apples thinly and microwaved for 3 mins with 1 tbsp and lemon juice and 1 tsp cinnamon, lay down the side, rolled up, places on baking tray in tin foil cases and baked for 45 mins at 170c fan (190c) At 30 mine I covered with Tim foil to stop the apple getting too brown and let cool and sprinkles with icing sugar and stuffed my face 😂

I made 3, one for me and the girls each………. the girls aren’t arsed…….. I’ll probably end up eating all 3! .

Damson jam

Damson jam ✌🏻

Ummmmm it MUST be autumn if I’m buying damsons and making jam right?!

.

.

I saw these damsons up @robinsonsiom yesterday and couldn’t resist buying some to make some damson jam. .

You know I’m not a fan of cooking things that take ages so making traditional jam does not appeal to me……

.

I decided to try my usual jam making recipe and due to the natural pectin in the damsons it totally worked! Yay! .

.

It can be used as a sweet or savoury jam as it got a beautiful tang! I had it on sweet brioche this morning to offset the tangyness 😍

.

.

You need –

.

💜 200g fresh damsons (halved and destoned) .

💜 100g runny honey (I used local Manx honey)

.

💜2 tbsp water

.

.

💜💜 add all Ingredients to a pan and bring to the boil. Reduce the heat slightly and keep stiring until the skin starts to some away from the fruit.

.

💜💜 when most of the skin appears to be separate, pass the mixture through a sieve into a bowl, pressing down with a fork to keep as much of the fruit as possible but leaving behind the skin

.

💜💜return to the pan and bring back to the boil.

.

💜💜reduce to a simmer and stir occasionally for 10-15 minutes ensuring the jam doesn’t stick to the bottom of the pan.

.

💜💜 when thickened pour into a jam jar and pop overnight in the fridge to continue to set ✌🏻

.

.

It’s not a totally set jam but I like mine like that. I love buying fruit in season and there’s so much you can do with damsons! Damson gin anyone?!! .

Vegan homage Apple pop tarts

🍂🍂🍂 Apple butter pop tarts 🍂🍂🍂

It was the first day of autumn yesterday so we had these homemade apple butter pop tarts for breakfast. They literally taste like autumn in your mouth!! 😍😍😍

.

.

Super easy! You can make your own pastry if you want but I buy ready rolled short crust pastry instead ✌🏻I saw the recipe for Apple butter on @whatifedbaby ‘s page years ago and now it’s my fav autumn flavour 😍

.

.

For the Apple butter you need – .

.

🍎 3 large apples – peeled and chopped .

🍏 tbsp maple syrup or honey .

🍎splash of lemon juice

.

🍏1 tsp cinnamon

.

🍎1/2 tsp ginger

.

🍏 pinch nutmeg

.

🍎 tsp vanilla extract .

.

🍏🍎 place all ingredients in a pan. Being to the boil and simmer until Apple has softened and liquid has reduced. .

🍎🍏 mash with a potato mashed and pour into a jar. .

🍏🍎 store in fridge to cool

.

.

This Apple butter is gorge on toast, on porridge or with pork chops if you so wish!

.

.

To make it into pop tarts you need –

.

🍎 1 roll @jus_rol shortcrust pastry .

🍏 the Apple butter .

🍎 icing sugar .

🍏 cinnamon

.

🍎🍏 preheat oven to 190c

.

🍏🍎 line a baking sheet with baking paper .

🍎🍏 divide the pastry into 8 pieces .

🍏🍎 on the bottom 8 pieces put 2 tsp of apple butter, cover with another piece of pastry and seal round the edge with a fork.

.

🍎🍏 transfer 4 pastries to baking sheet and bake until golden. Brown for 20 minutes .

🍏🍎 when cooled mix icing sugar with a little cinnamon and water and top the pastries .

.

SO BLOODY GOOD!!

Coconut lemon Vegan flapjacks

Do you have recipe or a taste that when you eat it takes you straight back to your childhood?

These coconut lemon flapjacks are mine 😍😍

.

I’ve removed the gluten and made them vegan but they still taste exactly the same! .

.

So quick and easy to make! Leave off the icing and add dried fruit and seeds for the perfect school snack ✌🏻

.

.

✌🏻180g pure spread (or other vegan butter) .

✌🏻150g @sweetfreedomuk fruit syrup .

✌🏻300g gluten free porridge oats .

✌🏻100g desiccated coconut .

✌🏻200g icing sugar .

✌🏻lemon juice (fresh or bottled)

.

✌🏻✌🏻METHOD .

✌🏻✌🏻Preheat oven to 180°C and line a baking with baking paper. . ✌🏻✌🏻Place the spread and syrup into a large pan over a medium heat, and stir until the spread melts. Remove the pan from the heat and stir in the porridge oats and coconut until well blended. . ✌🏻✌🏻Press the mixture down evenly into the tin. . ✌🏻✌🏻Bake in the oven for 20-25 minutes until golden brown. Remove the flapjack from the oven, score into squares with a knife and leave cool in the tin. . ✌🏻✌🏻When cooled, mix the icing sugar with drops of lemon juice until you get a pourable consistency. . ✌🏻✌🏻 cover the flapjacks with the icing

✌🏻✌🏻store in a sealed container and eat in 3 days .

Easy fudge

fudge!!!

This chocolate fudge is SO easy to make and the perfect Christmas present to make in bulk to give for presents ✌🏻

.

I Got this recipe off the @carnation_uk website;

.

🍫 400g chocolate (dark, milk or white) I use 200 milk, 100 dark and 100 white

.

🍫 400g tin of condensed milk (I used @carnation_uk )

. 🍫25g @iomcreamery butter

.

🍫150g icing sugar.

.

🍫any toppings or contents you want – so I used chocolate m&m’s inside and topped with various chocolate stars and sprinkles . You can mix in fruit, nuts, or even a couple or tablespoons of alcohol 🤪!!!

.

.

Directions-

🍫add the choc, milk and butter to a pan and melt slowly until it’s a creamy mix

.

🍫sift in the sugar and stir (or pop in mixer like I did) until thoroughly combined

.

🍫stir in any extras (I used m&m’s)

.

🍫 pour into a 20×20 pan lined with baking paper

.

🍫 decorate with toppings

. 🍫 chill overnight in fridge and cut in morning xx

.

I use double quantity and use a bigger tray!

.

Enjoy!

Stuffed sweet croissants

Operation clear the cupboards begins! .

There’s always so much chocolate in the cupboards at Christmas isn’t there? I’m defo gonna do the usual ‘melt it all down and make a batch of brownies’ special but until then I’m having fun using it up in other ways! .

This morning we used up some of the chocolate coins inside some croissants to make chocolate croissants. .

I love using @jus_rol – we used it as kids and it always seemed such a treat! .

Even more of a treat this morning jammed full of choc 😂 (2 coins per croissant) .
