Vegan pesto

Lots of people have asked how I make my nutfree pesto. I made it the other morning so i wrote it down. I also use vegan cheese so this is safe for school, vegan , ridiculously easy to make and delicious!!! 💚💚

💚 you need –

. 💚25g basil

.

💚1 garlic clove

.

💚40g vegan Parmesan (I used @violife_foods)

.

💚Zest and juice 1 lemon .

💚60ml extra virgin olive oil .

.

💚💚💚whack it all in the @nutribulletuk and whizz – easy as that! Store in a sealed container in the fridge for 3-4 days.

Perfect for school lunches!! .

Miss 3 took hers the other day in her @oogaababy bowl with lid and some fruit in her @innobabyllc tub 😍

Slow cooker vegan curry

Been getting all excited for Christmas and focusing on what our @elfontheshelf has been doing rather than focusing on food 😂

Just popped this sweet potato, butternut squash, lentil and chickpea curry in the slow cooker 😍 prepping for the week! .

Inspired by @littleveggieeats magic curry to make this #vegan curry for the week but tweaked it a bit and made it in the slow cooker. .

🌱300g red lentils, rinsed well

.

🌱350g butternut squash, peeled and chopped evenly

. 🌱350g sweet potato, peeled and chopped evenly .

🌱1 onion, diced

.

🌱2 tsp garlic purée

.

🌱1tbsp tomato purée .

🌱1 1-2 tsp curry powder .

🌱1tsp coriander (ground)

.

🌱1 tsp garam masala .

🌱1 tsp cinnamon .

🌱1 tsp ground cumin .

🌱400mL can coconut milk- full fat .

🌱400g can of diced tomatoes, including juices .

🌱1 400g can chickpeas, drained .

🌱3 portions of frozen spinach .

🌱600ml vegetable stock .

. 🌱🌱Add all to slow cooker and cook on low for 8 hours . .

Hidden veggie pasta

Sorry for the lack of posts recently but I’ve been feeling like 🐶💩 for a while and worse this week. The girls have been happy living off chippy chips (thanks Mr BTF) spaghetti hoops and beans for the recent but thought I’d best get some goodness in them today.

.

It’s nothing earth shattering, but it’s vegan and can be gluten free. It was minimal effort as I’m still not feeling great but it got 6 different veggies in us all 🙌🏻

.

.

You can use fresh but I had a bag of frozen Mediterranean chargrilled vegetables in the freezer (aubergine, courgette, peppers, onions and cherry tomatoes) which I cooked for 30 mins, threw in a food processor with a tin of chopped tomatoes and 2 portions of frozen spinach, a tbsp of tomato purée and 1tsp garlic purée and whizzed.

Mixed it up with cooked pasta (gluten free for me) and it was a hit. First meal I’ve eaten in a few days and the girls cleared their plates as did Mr BTF ✌🏻

Salmon tray bake

I’ve not done a tray bake in AGES but saw some lovely salmon fillets at @robinsonsiom yesterday so knew what to make for a quick and easy tea tonight. .

The girls did try some but I had to bribe them with a Jaffa cake to eat a piece…….. they weren’t fans! They had Macdonalds for tea after school with some friends to celebrate breaking up for easter hols tomorrow 🙌🏻🙌🏻

This dish was inspired by my gorgeous girl Kayla @thefamilyfoodproject ✌🏻✌🏻

You will need- .

🐟2 boneless salmon pieces dressed with;

.

🐟1tsp garlic purée

.

🐟1 tbsp sesame oil

.

🐟1 tsp honey (no honey under 12 months) .

🐟1 tbsp lemon juice

.

🐟sprinkle of sesame seeds

.

Placed on tray with extra lemon and asparagus .

Bakeat 200c for 25mins.

One tray summer chicken

One pot meals for winter – one sheet meals for summer ❤️❤️☀️☀️

I’m not about faffing in the kitchen for hours or doing loads of Washing up but I don’t want to miss out on flavour! .

.

1 sheet meals are where it is AT!! So easy and so tasty!!

.

.

For this balsamic chicken and roasted veg you need – .

.

☀️ 2 chicken breasts, halved

.

☀️1 yellow pepper (sliced and de-seeded)

.

☀️ baby tomatoes on the vine

.

☀️4 garlic cloves, peeled and halved .

☀️ fresh @staarvey_farm thyme .

☀️I red onion, quartered .

☀️ drizzle of balsamic vinegar .

☀️drizzle of olive oil .

.

☀️☀️preheat oven to 180c

.

☀️☀️line a pan with baking paper .

☀️☀️place chicken, peppers, onions, tomatoes and garlic on the tray, top with thyme and drizzle with oil and vinegar

.

☀️☀️ bake for an hour, turning the chicken half way

.

.

☀️☀️ I served with pasta in a homemade tomato sauce that was just 1 tin chopped tomatoes, 2 tbsp tomato purée, 1/2tsp garlic purée and splash of balsamic vinegar and 1 tsp sugar – whizz in @nutribulletuk and warm through 😍😍

.

.

I got all my Ingredients from @robinsonsiom – love how I can get so many local products there!! .

Quick and easy and tasty AF 😘

Vegan cottage pie

This is a BBC good food recipe and it’s delish!

🌱1.2kg floury potatoes, such as Maris Piper or King Edward
.
🌱50ml vegetable oil
.
🌱30g dried porcini mushrooms, soaked in hot water for 15 mins, then drained (reserve the liquid)
.
🌱2 large leeks
, chopped
.
🌱 2 small onions
, chopped
.
🌱4 medium carrots
(about 300g), cut into small cubes
.
🌱1 vegetable stock cube (make sure it’s vegan – we used Kallo)
.
🌱3 garlic cloves, crushed (I used garlic purée)
.
🌱2 tbsp tomato purée
.
🌱 2 tsp smoked paprika
.
🌱1 small butternut squash, peeled and cut into small cubes (I used a bag of frozen)
.
🌱 ½ small pack marjoram or oregano, leaves picked and roughly chopped (I used dried)
.
🌱½ small pack thyme
, leaves picked (I used dried)
.
🌱½ small pack sage sage
, leaves picked and roughly chopped (I used dried)
.
🌱4 celery sticks, chopped
.
🌱400g can chickpeas
.
🌱300g frozen peas
.
🌱300g frozen spinach
.
🌱20ml olive oil
.
🌱small pack flat-leaf parsley, chopped (I used dried)
.
.
🌱🌱Put the unpeeled potatoes in a large saucepan, cover with water, bring to the boil and simmer for 40 mins until the skins start to split. Drain and leave to cool a little. ( I just peeled and boiled as usual then crumbled on top)
.
🌱🌱Meanwhile, heat the vegetable oil in a large heavy-based sauté pan or flameproof casserole dish. Add the mushrooms, leeks , onions, carrots and the stock cube and cook gently for 5 mins , stirring every so often. If it starts to stick, reduce the heat and stir more frequently, scraping the bits from the bottom. The veg should be soft but not mushy.
.
🌱🌱Add the garlic, tomato purée, paprika, squash and herbs. Stir and turn the heat up a bit, cook for 3 mins, add the celery, then stir and cook for a few more mins.
.
🌱🌱Tip in the chickpeas along with the water in the can and reserved mushroom stock. Add the peas and spinach and stir well. Cook for 5 mins, stirring occasionally, then season, turn off and set aside. There should still be plenty of liquid and the veg should be bright and a little firm.
.
🌱🌱Peel the potatoes and discard the skin. Mash 200g with a fork and stir into the veg. Break the rest of the potatoes into chunks, mix with the olive oil and parsley and season.
.
🌱🌱Divide the filling into the pie dishes and top with the potatotes. Heat oven to 190C/170C fan/gas 5 and bake the pies for 40-45 mins, until the top is golden and the filling is heated through. If making individual pies, check after 20 mins. Best served with tomato ketchup – as all great shepherd’s pies are.

Lasagne with hidden veggies 

Lasagne – a classic but a super easy way to hide various veggies for ‘green stuff’ dodging mini humans 😂 .

And if you use @ballakellyfarm ‘s minced beef then you know you’re on to a winner already! 😍😍

You will need – 

.

❤️ 400g @ballakellyfarm minced beef

.

❤️ 1 tbsp olive oil

.

❤️ 1 onion – finely chopped 

.

❤️ 2 mushrooms, finely chopped

.

❤️1 handful of baby leaf spinach, finely chopped 

.

❤️100ml red wine

.

❤️150ml @iomcreamery milk

.

❤️1 heaped tsp garlic purée 

.

❤️ 3 tbsp tomato purée 

.

❤️1 tsp ground nutmeg 

.

❤️1 tin chopped tomatoes 

.

❤️1 ball fresh mozzarella, finely sliced 

.

❤️100g grated mozzarella 

❤️ dried or fresh lasagne sheets 

.

.
❤️❤️ heat the oil in a pan and add onion until softened, then toss muchrooms for 1 minute.

.

❤️❤️ add the mince and stir until browned. Drain off excess fat.

.

❤️❤️ add the wine and heat on high until all liquid is evaporated 

.

❤️❤️ add the garlic and tomato purée, stir to combine then add the milk and nutmeg. Heat until all liquid is evaporated.

.

❤️❤️ add the chopped tomatoes, bring to the boil and simmer for an hour. 

.

❤️❤️ preheat the oven to 190c (170c fan) 

❤️❤️ take an oven proof dish, cover the bottom with a thin layer of the meat sauce, top with lasagne sheets, top with sliced mozzarella and the repeat starting again with meat layer. Keep going until meat has finished or dish is filled. Last layer must be the pasta topped with any remaining fresh mozzarella with the added grated mozzarella.

❤️❤️ cover with foil and bake for 20 minutes. Remove foil and bake for s further 20. (Try and not let the foil touch the cheese or it will come off!!)

I served this with a fresh salad, some garlic bread and a few oven chips 😍😍 perfect fodder for a terrible night like this 🌧🌧🌧🌧🌧🌧🌧
