Vegan cottage pie

This is a BBC good food recipe and it’s delish!

🌱1.2kg floury potatoes, such as Maris Piper or King Edward
.
🌱50ml vegetable oil
.
🌱30g dried porcini mushrooms, soaked in hot water for 15 mins, then drained (reserve the liquid)
.
🌱2 large leeks
, chopped
.
🌱 2 small onions
, chopped
.
🌱4 medium carrots
(about 300g), cut into small cubes
.
🌱1 vegetable stock cube (make sure it’s vegan – we used Kallo)
.
🌱3 garlic cloves, crushed (I used garlic purée)
.
🌱2 tbsp tomato purée
.
🌱 2 tsp smoked paprika
.
🌱1 small butternut squash, peeled and cut into small cubes (I used a bag of frozen)
.
🌱 ½ small pack marjoram or oregano, leaves picked and roughly chopped (I used dried)
.
🌱½ small pack thyme
, leaves picked (I used dried)
.
🌱½ small pack sage sage
, leaves picked and roughly chopped (I used dried)
.
🌱4 celery sticks, chopped
.
🌱400g can chickpeas
.
🌱300g frozen peas
.
🌱300g frozen spinach
.
🌱20ml olive oil
.
🌱small pack flat-leaf parsley, chopped (I used dried)
.
.
🌱🌱Put the unpeeled potatoes in a large saucepan, cover with water, bring to the boil and simmer for 40 mins until the skins start to split. Drain and leave to cool a little. ( I just peeled and boiled as usual then crumbled on top)
.
🌱🌱Meanwhile, heat the vegetable oil in a large heavy-based sauté pan or flameproof casserole dish. Add the mushrooms, leeks , onions, carrots and the stock cube and cook gently for 5 mins , stirring every so often. If it starts to stick, reduce the heat and stir more frequently, scraping the bits from the bottom. The veg should be soft but not mushy.

🌱🌱Add the garlic, tomato purée, paprika, squash and herbs. Stir and turn the heat up a bit, cook for 3 mins, add the celery, then stir and cook for a few more mins.
.
🌱🌱Tip in the chickpeas along with the water in the can and reserved mushroom stock. Add the peas and spinach and stir well. Cook for 5 mins, stirring occasionally, then season, turn off and set aside. There should still be plenty of liquid and the veg should be bright and a little firm.
.
🌱🌱Peel the potatoes and discard the skin. Mash 200g with a fork and stir into the veg. Break the rest of the potatoes into chunks, mix with the olive oil and parsley and season.
.
🌱🌱Divide the filling into the pie dishes and top with the potatotes. Heat oven to 190C/170C fan/gas 5 and bake the pies for 40-45 mins, until the top is golden and the filling is heated through. If making individual pies, check after 20 mins. Best served with tomato ketchup – as all great shepherd’s pies are.

Super easy and tasty these pancakes tick all the boxes and are perfect for a Sunday morning lazy breakfast. It’s literally like chucking a bit of flour into a smoothie mix!

They’re vegan too!!

You need –
.
💜 1 ripe banana
.
💜 125g SR flour ( i used @laxeyflour But gluten free works just as well )
.
💜 150ml plant based milk (I used soya)
.
💜 15 fresh raspberries
.
💜 blueberries to drop into the pancakes
.
💜 frozen berries and raspberry sauce to serve
.
.
💜💜 in your @nutribulletuk Throw in the banana, milk, flour and raspberries. Whizz until smooth
.
💜💜 heat a lightly oiled pan to a medium high heat
.
💜💜make 4 pancakes at a time using a soup spoonful measure for each pancake and drop a few blueberries on the top side then flip when bottom is lightly browned
.
💜💜 serve in your @kiddobloom Tray with raspberry sauce (I bought mine from @marksandspenceriom Shhhhh! But you can make with raspberries and maple syrup) and frozen berries

Salt and chilli pepper chicken with egg fried rice 

Salt and pepper chilli chicken
2 organic chicken breasts, sliced

2 eggs

1/2 red pepper 

1/2 onion

Tsp garlic purée 

1 teaspoon salt 

100g bread crumbs

1 tsp chilli powder 

Light soya sauce

Coconut oil – tbsp

 
Method
Step 1
For the coating: Pour the bread crumbs into a bowl, add 1 teaspoon of salt and 1/2 tsp chilli powder and mix together. 
Step 2
Take your strips of chicken and dip in a bowl of beaten eggs, then roll in the bread crumb mix – repeat until all the chicken is coated. 
Step 3
Place the chicken pieces on baking paper on a tray . Cook the chicken at 200° for about 20 minutes or until the chicken is cooked through . 
Step 4
When the chicken is nearly cooked stir fry your chopped pepper , onion , chilli and garlic in the coconut oil, with 2 tsp of soy sauce.

Step 5
When the chicken is ready, add it to the pan with your onion mix . 

For the egg fried rice – 
Rice
An egg
Coconut oil

Step 1
Cook rice according to instructions (I used microwave rice) 
Step 2 
Heat 1 tsp of coconut oil in a pan
Step 3
Add the rice and coat in the coconut oil
Step 4
Whisk an egg and push he rice to one side of the pan, in the space add the egg and keep whisking until it’s all cooked through 
Step 5 
Mix the rice with the egg 

Chinese curry sauce 

Chinese curry sauce 
(adapted from an allrecipes.co.uk recipe) 
•1 medium onion, diced

•4 teaspoons Chinese five spice

•3 teaspoons ground ginger

•1 teaspoon garlic purée 

•1/2 teaspoon mild chilli powder

•2 tablespoons mild curry powder

•2 teaspoons tomato ketchup

•1 pint chicken stock (made with 2 •chicken stock cubes)

•1 tablespoon light soy sauce

•50ml full fat milk

•3 teaspoons sugar

•1 tablespoon coconut oil

•1 tablespoon cornflour, mixed to a paste with a drop of water
Directions – 
Heat olive oil in a frying pan or wok over medium heat. Add the onion, five spice, ginger, garlic granules, curry powder and chilli powder. Stir and cook for about a minute, then add the stock, oyster sauce, soy sauce and tomato ketchup.

Bring to the boil, then add cornflour paste and stir until thickened. Reduce the heat add the sugar and the cream and then leave to simmer on a very low heat for about 20 minutes.

Add your desired cooked ingredients to the sauce and warm through. I have added chicken and mushrooms to the sauce in my photo.

Rye raspberry and almond brownies

So lucky to have some amazing local producers on the Isle of Man. One of my favs is @laxeyflour . Not only do they have an amazing range of flours they are all preservative free – how amazing is that! I wasn’t going to post until new year but I made these amazing brownies with some rye flour that Laxey mill kindly let me trial for them and I couldn’t wait to post! Perfect for a New Year’s Eve pudding served warm with ice cream and certainly NOT #refinedsugarfree ! The rye gives these brownies an amazing rich flavour but if you only have plain use that. Also for richer use 300g plain but I prefer 1/2 plain 1/2 milk chocolate in mine 😍 enjoy!

❤️150g dark chocolate (I used green and blacks organic)

❤️150g milk chocolate (I used green and blacks organic)

 ❤️250g @iomcreamery salted butter

❤️400g soft light brown sugar (I thought I had this is the cupboard but it was brown Demerara – worked fine but went a bit clumpy in the pan when melting but resulted in the brownies having delicious sugar clumps in them 😍😍)

 ❤️4 large #gellings #manx eggs

❤️140g @laxeyflour rye flour

❤️50g cocoa powder

❤️200g fresh raspberries

 ❤️100g flaked almonds

 ❤️❤️Heat oven to 180C

. ❤️❤️ Line a 20 x 30cm baking tray tin with baking paper .

❤️❤️break the chocolate into pieces And place into a pan on a low heat with the butter and sugar stirring occasionally. Removed from heat when fully melted

❤️❤️lightly whisk in the eggs into the melted chocolate mixture one at a time.

.

❤️❤️Sieve over the flour and cocoa powder and stir in to the chocolate mix

. ❤️❤️Stir in half the raspberries then transfer the mix to the baking tray, scattering the remaining raspberries on top

.

❤️❤️ Bake on the middle shelf for 25-36 mins depending how gooey you like your brownies 😍
