Salt and chilli pepper chicken with egg fried rice 

Salt and pepper chilli chicken
2 organic chicken breasts, sliced

2 eggs

1/2 red pepper 

1/2 onion

Tsp garlic purée 

1 teaspoon salt 

100g bread crumbs

1 tsp chilli powder 

Light soya sauce

Coconut oil – tbsp

Step 1
For the coating: Pour the bread crumbs into a bowl, add 1 teaspoon of salt and 1/2 tsp chilli powder and mix together. 
Step 2
Take your strips of chicken and dip in a bowl of beaten eggs, then roll in the bread crumb mix – repeat until all the chicken is coated. 
Step 3
Place the chicken pieces on baking paper on a tray . Cook the chicken at 200° for about 20 minutes or until the chicken is cooked through . 
Step 4
When the chicken is nearly cooked stir fry your chopped pepper , onion , chilli and garlic in the coconut oil, with 2 tsp of soy sauce.

Step 5
When the chicken is ready, add it to the pan with your onion mix . 

For the egg fried rice – 
An egg
Coconut oil

Step 1
Cook rice according to instructions (I used microwave rice) 
Step 2 
Heat 1 tsp of coconut oil in a pan
Step 3
Add the rice and coat in the coconut oil
Step 4
Whisk an egg and push he rice to one side of the pan, in the space add the egg and keep whisking until it’s all cooked through 
Step 5 
Mix the rice with the egg
