Mindful chef peacan granola 

Breakfast today is crunchy pecan, coconut and chia granola by @mindfulchefuk 😍.

I made this last night –

.

🥄100g gluten-free oats .

🥄70g pecans .

🥄30g flaked almonds .

🥄20g sunflower seeds .

🥄20g pumpkin seeds .

🥄20g chia seeds .

🥄20g desiccated coconut

🥄2tsp cinnamon .

🥄pinch salt

.

🥄1 1/2 tbsp maple syrup

.

🥄2 tbsp coconut oil .

🥄20g raisins .

.

🥄🥄preheat oven to 180c

.

🥄🥄 mix oats, pecans, almonds, seeds, coconut, cinnamon and salt in a bowl

.

🥄🥄 mix maple syrup and melted coconut oil and then pour over the fry mix

.

🥄🥄 spread mix evenly on a tray lined with baking paper and cake for 20 mins, shaking halfway through

.

🥄🥄allow mix to cool before mixing through raisins and storing in an airtight container

I had mine with @alpro cherry soya yogurt this morning 🍒🍒 I didn’t think this would be a hit with the girls but both ate it up!!! 🙌🏻🙌🏻
