Breakfast cereal energy balls 

Breakfast cereal energy balls for breakfast!! 😍👌🏼.

I’m not much of a measurer when it come to energy balls so always just add a bit more wet or a bit more dry if the consistency isn’t to your liking when you come to roll.

❤️ medjool dates .

❤️dried apricots .

❤️raisins

❤️@sweetfreedomuk fruit syrup .

❤️ground almonds .

❤️desiccated coconut .

❤️#glutenfree oats

❤️pumpkin seeds .

❤️cinnamon

.

❤️#glutenfree puffed rice cereal .

❤️❤️ I threw dates, apricots, raisins and 1 tbsp fruit syrup in the blender to make the ‘base’. Whizzed until all combined and in a thick paste.

❤️❤️ in a bowl I added the ground almonds, coconut, pumpkin seeds, more whole raisins, oats and puffed rice and cinnamon and combined. Mixed with the paste.

❤️roll into balls

❤️set in fridge .

Chicken tomato curry 

Super easy tea (surprise!! 😂😂) tonight! ..

❤️ready cooked chicken .

❤️vegetable oil 1/2 tbsp

.

❤️1 tbsp medium curry powder (more if you like more of a kick)

.

❤️1 tbsp mango chutney

.

❤️1 tin coconut milk

.

❤️1 tin chopped tomatoes .

.

❤️❤️fry the chicken in the oil with the curry powder .

❤️❤️add mango chutney, coconut milk and tomatoes, being to the boil and simmer for 20-30 mins, until thickened a bit, stirring occasionally .

❤️❤️serve with basmati rice .

No bake peanut butter flapjacks 

No bake peanut butter flap jacks – YUM!!.

I made these at the weekend – they were meant to be energy balls but they wouldn’t roll so energy bars they became and they set well in the fridge 🙌🏻🙌🏻

☀️ 1 tbsp coconut oil

.

☀️ 1 tbsp peanut butter

.

☀️1 tbsp desiccated coconut .

☀️ 1 tbsp raisins

.

☀️ 1/2 tbsp cocoa powder .

☀️1 tbsp maple syrup or @sweetfreedomuk fruit syrup

.

☀️ 3ish tbsp gluten free oats (add 1 tbsp at at time until sticking well together) .

.

☀️melt oil, Peanut butter and syrup in a pan, add the raisins, coconut and coco powder, stir in gluten free oars until consistency is right.

.

☀️push down in lined tray and place in fridge for 6+ hours .

☀️cut into slices (about 8)

.

☀️eat them all yourself. .

No bake nutfree flapjacks 

.

I made these no bake nut free flap jacks last night for this morning’s breakfast ( they’re of course refined sugar free!) .

.

Served with 🍓 and 🍉 ❤️

❤️9 medjool dates .

❤️16 soft dried apricots .

❤️1 tsp vanilla extract

.

❤️1 tsp cinnamon .

❤️2 heaped TBSP coconut oil .

❤️2 heaped TBSP desiccated coconut

.

❤️2 tablespoon raisins .

❤️1 tablespoon sunflower seeds .

❤️ 4 tbsp gluten free oats .

. ❤️❤️ put the dates, oil and apricots in the food processor and whizz until combined and smooth

.

❤️❤️ transfer the mix into a bowl and add all remaining ingredients bar the oats

.

❤️❤️add the oats at the end a tbsp at a time. You may need slightly more or less depending on the juiciness of your dates

.

❤️❤️mix well and add mix to a baking paper lined tray (mine was about 50cm by 30cm) and push down well. Make sure the baking paper piece is big enough so you can fold it back over the top to cover the mix too.

.

❤️❤️place in fridge either overnight or a good 4 hours until set

.

❤️❤️ slice into equal portions and serve .

Annabel’s chicken and vegetable chowder

it is FREEZING!! It’s June and it’s like November bbbbrrrrrrrrr 🌫🌫🌫🌫🌫🌫🌫🌫.

Anyway the ONLY good thing about being cold is the food and this chicken and vegetable chowder by the gorgeous @annabelkarmel is not only tasty and comforting but it’s ready in 20 mins – WIN WIN WIN!! It’s from my fav ‘busy mums cookbook’ – a recipe’s never failed me yet!

INGREDIENTS- .

🍵15g butter

.

🍵1 onion finely diced .

🍵100g butternut squash, peeled, deseeded and diced .

🍵150g floury potato, peeled and diced .

🍵2x 198g tins sweetcorn, drained .

🍵600ml chicken stock

.

🍵4tbsp double cream

.

🍵75g cooked chicken, shredded

.

🍵Salt and black pepper .

.

DIRECTIONS – .

.

🍵🍵 melt the butter in a pan, add onion and sauté for 3-4 mins till soft. Add squash potato and sweetcorn then pour over stock. Cover and bring to the boil.

.

🍵🍵 simmer for 10 mins, covered, until potato and squash are tender.

.

🍵🍵 remove 1/2 the soup and blend until smooth before returning it to the saucepan. Add the cream and and chicken and simmer for 2 more mins before serving.

.

.

I made this dairy and gluten free by using ‘pure’ spread instead of butter and oatly creamy oat instead of cream. The chicken stock was gluten free!!

Fish fingers

prepped and ready in 1/2 hour. So quick and easy to make..

.

✌🏻2 skinless and boneless white fish fillets (i used cod)

.

🐟✌🏻1 egg, whisked

.

🐟✌🏻golden breadcrumbs or blitzed cornflakes .

.

🐟✌🏻preheat oven to 200c

.

🐟✌🏻cut the fish into fingers .

🐟✌🏻dip in the whisked egg

.

🐟✌🏻dip in the bread crumbs .

🐟✌🏻place on baking paper on a tray in the oven for 20mins 👌🏼👌🏼

.

Served with corn on the cob (refused) sugar snap peas (refused) and broccoli (refused) 🙄
