This afternoon I also made a firm favourite of ours – Cheese flapjacks from the baby led weaning cookbook.
Both girls love them and they are so quick and easy to make, they freeze well and are perfect for taking out for packed / picnic lunches.
There is A LOT of cheese in these but it makes about 30 flapjacks so not too bad in that context!!
❤️300g porridge oats.
❤️350g cheese (grated)
❤️150g grated carrots
❤️150g butternut squash
❤️(Optionally add 200-300g of grated courgettes, sweet potato etc)
🔹Preheat oven to 180c
🔹Melt butter in pan then stir in oats, eggs, cheese (and veg if adding)
🔹Put into a baking tin and push down with spoon. Flapjacks should be about 1/2 inch thick.
🔹Bake for 20 mins until brown 🔹Cut into about 30 pieces and transfer to cooling rack.
